Versatility of the Peerless CE131PE at Shore House Tavern


For Devin Lee, kitchen manager at the Shore House Tavern in Sandusky, Ohio, the versatility of the Peerless CE131PE is a perfect complement to his kitchen and an asset to the restaurant.  His experience in the business saw him working in other kitchens before finding his home at Shore House Tavern, where he first used the Peerless CE131PE. “I’ve worked in a couple other kitchens before and I’ve worked with other ovens, but I really do like this oven a lot,” Lee said. In discussing the merits of the oven, Lee pointed out that the versatility to cook a variety of menu items, the oven’s ability to maintain temperature, and the space-saving design were all things that made his user experience a good one.

The versatility of the oven is a great fit for Shore House given their diverse menu options, something Mr. Lee pointed out immediately. “I’ve cooked so many things in here – it’s excellent, very versatile,” he explained. “We do flatbread, and it cooks them evenly into a really beautiful product. We also do dips in the oven and we run our mac and cheese through the oven, too.”

Devin explained that the three shelves of the CE131PE enabled him to learn how best to maximize the cooking space for the wide variety of menu items he could be cooking at any given time, while the oven’s ability to maintain temperature adds to the precision. “It holds the temperature well, though obviously it may drop if you’re constantly opening it up and putting things in, but then it goes right back and stays cooking evenly.” He said that being able to maneuver items between shelves while still maintaining an even bake is extremely helpful when trying to time out orders.

When it comes to space, Mr. Lee agreed that the small footprint of the oven made it relatively easy to fit on the line and added that the space inside the oven was more than adequate for his needs.  “It’s just fine on space,” he said.  “We use small cast iron skillets for our macs and dips and you can fit about 6 of those on a shelf, and then you can fit 4 or 5 of our flatbreads on a shelf so you can plan it out like that,” he explained.  The one thing that kept coming up was the amount of different food that could all be prepared simultaneously in the oven.  “Flatbreads cook in about 6 or 7 minutes and then macs and dips run about 8-10 minutes,” Lee said, “so as long as you can time it out it works out beautifully.”

At the end of the day the Peerless CE131PE countertop model has been a great asset to the Shore House Tavern and Lee says he would have no hesitation is someone asked him about Peerless Ovens. “I would definitely recommend Peerless,” he said.

“Even if you’re just a sandwich shop and you’re toasting your breads in there or doing open face sandwiches, it’s really versatile so you can use it for anything as long as it fits inside.” He added that the oven’s stainless-steel design also makes it relatively easy to keep clean.
